1 cup parmesan cheese, shredded or grated
Ground black pepper or cayenne pepper or paprika
Preheat the oven to 300 F
Line a cookie sheet with foil or parchment paper. If you are using foil, spray some non-stick cooking spray Drop a tablespoon of parmesan cheese in a mound on the sheet. Line the cookie sheet with 6-8 mounds of cheese leaving enough space between them (at least 4 inches). Season with cayenne pepper. Bake in the middle rack of the oven for 5-6 minutes, until the cheese has melted into a golden brown crisp.

Gently remove and let cool for 15-20 minutes before you serve. It is a great to serve with any soup or pasta. You can also make bruschetta and top each crisp with it, makes a great appetizer/snack.
