Cilantro Pesto


2 cups, packed, of cilantro, large stems removed
1 roasted red bell pepper (optional)
1/2 cup mixed nuts (In this case I used Pine nuts and walnuts, you could also use pine nuts & pecans)
1/4 cup chopped red onion
2 chopped serrano chilli (with seeds)
1/2 teaspoon salt
1/4 cup olive oil
5 cloves garlic, minced ( you could add upto 7 to make it more garlicky or make it 3 to make it milder)
1 tbsp white wine vinegar
1/4 cup grated Pecarrino Romano
salt to taste

Process all the ingredients except the olive oil together in a processor. Keep it running on low and drizzle in the olive oil slowly to mix it all in together.
