I have recently started eating oatmeal for breakfast and I am hooked! There are just so many options both savory and sweet. I don’t advise buying the prepackaged branded ones laden with sugar, salt or preservatives. Buy the regular old fashioned oats and it takes less than 15 minutes to cook it in any way. Sky is the limit when it comes to ingredients you can use to make yummy oatmeal. And don’t forget all the health benefits. This is one yummy food that’s also good for you as long as you stay away from adding too much sugar or salt. Just a pinch of either is just enough.
For the holiday season, this morning I made oatmeal combining pumpkin pie and pecan pie flavors minus the fat and sugar. The flavor still stays great!
3/4 cup old fashioned oats
1/4 cup canned and cooked pumpkin puree
3 tbsp honey (if you like it really sweet make it 4)
1/8 tsp pumpkin pie spice
3 tbsp coarsely chopped pecans
1 1/4 cups milk (I use 1%)
If you don’t have pumpkin pie spice, mix cinnamon, allspice, ginger and nutmeg powders together and make your own.
In small pot, bring milk and pumpkin pie spice to a boil over high heat. Reduce heat to medium and stir the oats on. Cook 6-7 minutes ( I used old fashioned oats; if using instant oats it takes only 1-2 minutes) or until most of liquid is absorbed, stirring occasionally. Stir in pumpkin and honey, cook for 2 more minutes. Serve warm and top with pecans.
