Egg Bhurji (Indian Scrambled Eggs)

We all want a weekend filled with unwinding, relaxation, binge tv watching and comfort food. I’ve learned that eating comfort food doesn’t have to be bad for you. A big part of evoking that comfort in healthy foods is nostalgia, by adding flavors you love into the dish. I’m starting off the weekend with the quintessential Indian breakfast: Bhurji; filled with flavors from home.

Soft and creamy butter scrambled eggs with onions, chillies, sweet peppers, tomatoes, and indian spices = joy.  Just looking at the picture below makes me happy; living the spice life! Hope you try it.

Ingredients:
Serves 2
2 eggs + 3 egg whites
(I use vital farms pasture raised organic whole eggs; and organic liquid egg whites from Lucerne farms. I always add some extra whites in there and reduce whole eggs, but you could certainly use just whole eggs)
1 yellow bell pepper, finely chopped
1/2 large yellow onion, finely chopped
4 indian/thai green chillies, finely chopped (use serrano or jalapeno for milder heat)
1 small roma tomato, finely chopped
a handful cilantro leaves, washed and finely chopped
2 tbsp unsalted butter
1/2 tsp coarse kosher salt
1/2 tsp turmeric powder
1/2 tsp garam masala
1/2 tsp cumin powder
1/2 tsp coriander powder
1 tsp dried kasoori methi (dried fenugreek leaves)

Method:

Melt butter over medium-high heat in a non stick skillet. Once the butter is melted and starts to turn golden and clear, add the chillies, onions, peppers, tomatoes and cilantro. Mix well and let this cook for 3-5 minutes until the veggies soften.

Add the measured spices; turmeric, cumin, coriander, garam masala powders and methi. Also add measured salt. Toss together and let cook for another 5 minutes.

Add the eggs + egg whites and reduce heat to medium-low. Over low heat, gently fold the eggs into the veggie + spice mixture. Folding it gently over low heat keeps the eggs soft and creamy.

Serve hot with your favorite kind of toasted buttered bread.

I kept it carb free, and had a side of my favorite lemon tea, which is a great drink combo with the spiced eggs.
